Apricot Ice Cream

Apricots pureed with apricot brandy and stirred into softened vanilla ice cream.

Ingredients -
12 or more Canned, Peeled, Pitted Apricots
2 teaspoons Lemon Juice or Apricot Brandy
1 quart Vanilla Ice Cream
Chopped Pistachios or Whipped Cream & Glazed Apricot Pieces (optional)
 
Preparation:

1. Using a blender, puree the apricots to measure 1 cup.

2. Add the apricot brandy.

3. Stir the apricot blend into the softened ice cream.

4. Transfer the apricot ice cream into plastic containers and freeze until firm.
