1. Bring a medium pot of water to a boil.
2. Remove the pot from the heat, add the gelatin and let it dissolve.
3. Add the cold water and the sherry.
4. Add the vanilla ice cream, stirring until melted.
5. Refrigerate the mixture until it is slightly thickened.
6. Stir and divide the mixture amongst dessert dishes.
7. Refrigerate for one hour.
8. Serve.
