Brownie Ice Cream Surprise

Brownie round topped with mixture of fresh strawberries, strawberry ice cream, strawberry cheesecake bites, and mini chocolate morsels. Second brownie round placed on top and dessert placed in freezer to set. When ready to serve, brownie is topped with chocolate frosting, whipped topping, strawberries and garnish of chocolate curls and mint leaves.

Ingredients -
1 box Double Chocolate Brownie Mix, prepared as instructed
1 quart Strawberries
1 (1.75 quarts) package Strawberry Ice Cream
20 Strawberry Cheesecake Bites
1/2 cup Mini Chocolate Morsels
1 (16 ounces) can Chocolate Frosting
1 (8 ounces) container Frozen Whipped Topping, thawed
Milk Chocolate Bar
Mint Leaves
 
Preparation:

1. Preheat the oven to 350 degrees F.

2. Divided the brownie batter between to 9 inch round baking pans.

3. Bake at temperature as instructed.

4. Remove from the oven and refrigerate.

5. Dice half of the pint of strawberries.

6. Add the berries, cheesecake bites, ice cream and chocolate to a large bowl.

7. Place one of the brownie rounds into a springform pan.

8. Top the brownie with the ice cream.

9. Place the other brownie round on top of the ice cream.

10. Place back in the freezer.

11. Microwave the chocolate frosting for 20 seconds.

12. Pour the frosting over the top of the brownie.

13. Top with the whipped topping and remaining strawberries.

14. Garnish with curls of chocolate and mint leaves.

 



Ice Cream Making Tip -
Soften Ice Cream

Place ice cream in the microwave and heat on a low setting for 20-30 seconds, or until you reach the consistency you desire.

Making Ice Cream

You will end up using approximately 1 cup of rock salt with every 6 cups of ice when using older style ice cream makers.
