Chocolate Ice Cream

Ice cream prepared from eggs, granulated sugar, cocoa powder, vanilla extract, half-and-half, whipping cream and evaporated milk.

Ingredients -
4 Large Eggs
2-1/2 cups Sugar
1 cup Sifted Cocoa
1 tablespoon Vanilla
1 pint Half-and-Half
1/2 pint Whipping Cream
1 can Evaporated Milk
 
Preparation:

1. In a large bowl, add the eggs and beat them until white and foamy.

2. Slowly add the sugar beating well to combine.

3. Add the rest of the ingredients and mix well.

4. Add the mixture to a 1 gallon container.

5. Fill the container with milk 2 inches from the top.

6. Freeze until firm.

7. Serve.

Scrambled Eggs

To temper eggs, or cook them without scrambling them, whisk several very small amounts of hot cream into the eggs, and then pour the eggs into the cream.

Alcohol as an Ingredient

Alcohol should be used in small amounts when making ice cream, as the alcohol will stop the ice cream from melting.
