Chocolate Velvet Ice Cream

Velvety smooth ice cream prepared from sugar, cocoa powder, egg yolks, heavy cream and semisweet chocolate.

Ingredients -
2/3 cup White Sugar
1/3 cup Unsweetened Cocoa Powder
3 Egg Yolks, beaten
2-2/3 cups Heavy Cream
1/3 cup Semisweet Chocolate Chips
 
Preparation:

1. Stir together sugar and cocoa in a medium bowl.

2. Add the egg yolks and blend with an electric mixer.

3. Add the cream a little bit at a time, beating well after each addition.

4. Chill the mixture in the refrigerator.

5. While the cream mixture is chilling, grate the chocolate chips in a food processor until fine.

6. Stir the chocolate into the cream mixture.

7. Freeze in the canister of the ice cream maker according to manufacturer's instructions.

Chilling Ingredients

For best results chill ingredients before making ice cream. This does not apply to milk and eggs that will be used as a base for making custards.

Unsweetened Cocoa Powder

Unsweetened cocoa powder is created when the cocoa press extracts the cocoa butter from roasting chocolate beans. This process produces dry cakes of cocoa that are then ground into powder. Most cocoa powder is unsweetened.
