Homemade Strawberry Ice Cream

Ice cream prepared from mashed strawberries, sugar, salt, vanilla extract and heavy cream.

Ingredients -
2 cups mashed Strawberries
1 cup Sugar
1/8 teaspoon Salt
1 teaspoon Vanilla Extract
4 cups Heavy Cream
 
Preparation:

1. Add mashed strawberries to medium mixing bowl.

2. Stir in sugar and salt until dissolved.

3. Stir in vanilla and heavy cream. Mix well. Place in freezer.

4. When mixture is nearly solid, remove from the freezer and beat vigorously by hand or with an electric beater for several minutes.

5. Return to the freezer until solid. Store in airtight container.

Sugar in Ice Cream

Sugar can come from a variety of ingredients that are incorporated into ice cream mixture including juice, fruit, and sugar itself. The level of sugar in a mixture plays a pivotal role in the hardening of the ice cream during churning. Too little sugar will result in ice cream being softer.

Chill your mixture beforehand and then follow the manufacturer’s instructions for best results. Once you’ve made ice cream a few times you will get the knack for what works best in your conditions and with the different ingredients that can change the texture of your finished product.
