Hot Fudge Sauce

Homemade hot fudge sauce prepared from light corn syrup, heavy cream, and semisweet chocolate.

Ingredients -
1/3 cup Light Corn Syrup
1 cup Heavy Cream
8 ounces chopped Semisweet Chocolate
 
Preparation:

1. Add light corn syrup and heavy cream to microwave-safe bowl.

2. Microwave the heavy cream mixture on high 4 minutes, stirring after 2 minutes.

3. Stir in semisweet chocolate and let stand 2 minutes.

4. Whisk until smooth. Serve warm over ice cream.

Churning at the Proper Speed

Churning and ice cream mixture too slow can cause large ice crystals to form. If it is churned too slow, not enough air is incorporated into the ice cream, a characteristic that helps it freeze harder.

Substituting with More Butterfat

Increasing the amount of fat in ice cream will result in ice cream with a smoother texture. Using cream or half-and-half in place of whole milk will accomplish this.
