Lime Ice Cream

Ice cream maker recipe prepared with whole milk, white sugar, fresh lime juice, fresh lime zest, and heavy whipping cream.

Ingredients -

2 cups Whole Milk
1-1/4 cups White Sugar
1/3 cup Fresh Lime Juice
1-1/2 teaspoons Grated Lime Peel
1 cup Heavy Whipping Cream

 
Preparation:

1. Combine the milk and sugar in a saucepan.

2. Cook over medium heat until the sugar is dissolved and the mixture reaches 175 degrees F.

3. Cool it to room temperature.

4. Stir in the lime juice and peel.

5. Freeze in the freezer for 6 hours.

6. Transfer frozen lime mixture to a bowl.

7. Allow to soften slightly.

8. Beat the whipping cream until stiff peaks form in a small mixing bowl.

9. Fold into the softened lime mixture.

10. Allow the ice cream to firm up in your freezer for another 4 hours before serving.

 



Ice Cream Making Tip -
Heavy Whipping Cream

Heavy whipping cream is also called heavy cream. The whipping cream has a milk fat content between 36 and 40 percent. When whipped, the cream will double in volume. Look for heavy cream with other dairy products and store in the coldest part of your refrigerator until ready to use.


Ice Cream Making Tip -
Fresh Lime Juice

2 or 3 limes will provide 1/3 cup of fresh lime juice. Microwaving the limes for 30 seconds will produce a little more juice from each lime.
